Why Bother with IE?
All students should know more about populations unlike themselves, but a diverse student body can pose intellectual challenges that benefit all students (see, for example, Mitchell J. Chang, et al. "The Educational Benefits of Sustaining Cross-Racial Interaction among Undergraduates." Journal of Higher Education 77, no. 3 (May 2006): 430-455). Because of the breadth and variety of careers psychology majors pursue after college, the diversity goals for teaching and learning in psychology increase.
Differences in Terminology
A "stereotype" in psychology often refers to a single characteristic (e.g. that Asians are good at math). In other disciplines, stereotypes are a constellation of characteristics embedded in a time and place (e.g., the "coolie" is not the same as the "model minority"). That difference suggests another difference in terminology: a "primary source" is not defined the same way across disciplines.

In addition to the more obvious approach of adding materials written by or about particular populations or projects or papers about diversity-related issues, you might also consider a topical thread running through several courses or structuring a program. Obvious choices include stereotypes or sexuality, but topics like intelligence also offer a critical subject for examining stereotypes about a number of historically marginalized populations while simultaneously normalizing difference.
