Advanced Cooking
July 23–24, 2018 | 2 Days 

For youth entering grades 6–10 in the fall. 

  • Important for youth entering grades 6 and 7: Cooking is a prerequisite if you wish to enroll in Advanced Cooking.

July 23: 8:45 a.m.–4:30 p.m.
July 24: 8:45 a.m.–5:30 p.m.
   

This program will follow a barbeque them. Participants will learn advanced information on grilling, roasting, sauteing, smoking and additional barbeque applications. They will also learn the fundamentals and participate in customized orders, butler service and action stations.

Day 1: July 23, 2018

8:45–9 a.m.  Camper drop-off
9–9:30 a.m.  Get to know your fellow campers
9:30–10:30 a.m.  Introduction to Food Safety and Sanitation:
Handwashing, basid food safety, tour kitchen, terminology, equipment and temperatures
10:30 a.m. – Noon Knife cuts/cooking techniques
Chef demo action station
Campers will prepare their own meal for lunch
Noon–1 p.m.  Lunch
 1–2 p.m.  Prep vegetables for Barbeque themed patio party using knife skills
2–3 p.m.  Nutrition knowledge
Prepare health snacks
3–4:30 p.m.  Review menu and coordinate for big event
4:30 p.m.  Dismissal

Day 2: July 24, 2018

8:45–9 a.m.  Camper drop-off
9 a.m. –Noon  Demo stations for appetizer party
Noon–1 p.m.  Lunch
1–4:30 p.m.  Review recipes and prepare for the big event
4:30–5:30 p.m.  Party: Serve your family, eat and enjoy
5:30 p.m.  Dismissal
